Daucus carota, a multi-coloured richness
Belonging to the Apiaceae family, in the wild, carrot has been discovered in Central Asia several thousand years ago. Purple, violet, pink, yellow and white, it became orange in the 16th century, likely due to the crossing of Asian and Mediterranean species.
Under their different colours, every carrot has its own advantages. Thus, the orange carrot, along with the brown variety, contains more vitamins than the yellow or white ones. The violet and pink varieties, more pigmented, contain more beta-carotene than the others. The red one comes with lycopene, another carotenoid, found also in tomatoes and water-melons, while the black one is coloured by anthocyanines, a kind of flavonoids found also in blueberry, in plum or in eggplant.
