Nuruk has been used in traditionalist brewing since the period of the Three States.
According to the method of manufacturing, it is classified as an improved nuruk that is made by inoculating pure cultured fungi such as Aspergillus kawacii and Aspergillus oryzae and a traditional nuruk that is produced by the breeding of many kinds of microorganisms such as fungi, yeast, and bacteria.
The yeast also contains a lot of amino acids such as valine, leucine, serine, polline, glycine, etc., which are decomposable products by protease.
